拔丝básī
1.把金属材料制成条状或丝状物。通常在不加热的情况下进行。{wire drawing; draw metal into wire, usu. without heating;}也叫also拉丝{lāsī}。
2.烹调方法,把油炸过的山药、苹果之类的食物放在熬滚的糖锅里,吃时用筷子夹起来,糖遇冷就拉成丝状{cooking of tossing deep-fried yam or apple pieces in melted sugar which is pulled into fine threads when eaten}:
